I didn’t plan on blogging this recipe as it’s just so simple, but a few people have asked me for it so I decided I would. As I didn’t plan to write it up I only have a photo of the end product but it really is ridiculously easy to make – my 9 year old did it all by himself.
Giant Cookie Recipe:
You will need a food processor (unless you want to mix by hand) and a big ovenproof frying pan (I used a 30cm pan)
It takes about 15mins to prepare and cooks for 20mins.
200g Softened Butter plus extra for greasing the pan.
250g Light Brown Sugar
2 Egg Yolks
275g Plain Flour
1tsp Baking Powder
150g Fillings (I used a large bar 0f 70% dark chocolate smashed into bits.
Pinch of salt.
- Heat the oven to 180c/160c fan. Put the butter and sugar in the food processor until combined. Add the egg, flour, baking powder and salt. Pulse until it’s a crumbly dough.
- Tip mixture into a bowl and add your toppings (I do this by hand so it keeps nice big chunky bits in the cookie). Lightly butter the frying pan the spoon the mixture in flattening it down.
- Bake for 20 mins – if you don’t want it to be gooey and prefer a firm cookie bake it for 30mins.
- Leave it to rest for about 5 mins or you won’t get it out of the pan in one piece.
**WARNING** DO NOT TOUCH THE PAN HANDLE LIKE I ALWAYS DO
See it’s ridiculously easy. It’s really nice when it’s still warm served with ice cream but will last for a couple of days wrapped in foil.
